Take wood veneer if…
Choose veneer if you want real wood without the movement of a solid wood door. Grain running continuously from door to door is what separates a designed kitchen from an assembled one.
Take polymer / lacquered mdf if…
Choose polymer if evenness matters more than material. A solid tone stays identical everywhere and forever, whereas two veneer doors exposed differently will eventually stop matching.

Wood veneer
A thin sheet of real wood over a stable substrate. You get genuine grain without the movement of a solid wood door.
What they don't tell you Wood shifts colour with light. A south-facing door will no longer match the pantry door after a few years, normal, but worth knowing in advance.
Polymer / lacquered MDF
A finish applied and cured over MDF. It is the minimalist choice: it gives a deep, even matte that melamine cannot match.
What they don't tell you Dark matte finishes show fingerprints and micro-scratches dramatically. Ask for a handled sample and look at it in raking light before committing.
Worth knowing before you sign
If you go with veneer, ask for the doors to be cut from the same log and numbered for installation. It costs nothing at order time and cannot be fixed afterwards.
