Compare materials on how they behave

Everyone compares materials on how they look in a showroom. What matters after installation is different: does it take a pan straight from the oven, can it be repaired, does it swell if water gets in. Here are five behavioural criteria, rated against each other, and for each material the flaw nobody shows you.

Countertops

In plain terms Non-porous, so no sealing and no wine or oil staining. It is the default for most contemporary kitchens in Quebec, and for good reason.

What they don't tell you The resin binding the quartz yellows and can scorch under a pan straight from the oven. A trivet is not optional, several manufacturers make it a warranty condition.

Granite

In plain terms Natural stone, so every slab is unique and it takes direct heat. The only counter here where setting down a hot pan has no consequence.

What they don't tell you Porous: it needs sealing, generally once a year. Unsealed granite absorbs oil and develops permanent dark patches around the range.

Large-format porcelain

In plain terms Technically the best-performing material here: indifferent to heat, stains, and scratches, and available in very thin slabs that allow fine edges.

What they don't tell you Brittle at the edges and effectively unrepairable: a chip on an island corner cannot be filled, the slab gets replaced. Requires an installer who has fitted it before.

Solid wood (butcher block)

In plain terms The only material here that fully repairs: sanding and re-oiling erases years of marks. It ages rather than degrades.

What they don't tell you Around a sink, wood moves with moisture and eventually blackens at the joints if maintenance lapses. Many kitchens keep it for the island and put stone on the perimeter.

Laminate

In plain terms Far better than twenty years ago: current decors imitate stone convincingly, and seamless edge treatments have solved its most visible flaw.

What they don't tell you The core is fibreboard. Water getting into the sink cutout swells the core, and swelling cannot be repaired.

In plain terms Board faced with a thermally fused decor paper. Stable, light, and available in textures that imitate wood credibly in matte.

What they don't tell you Edges are the weak point: edge banding lifting near the dishwasher is the most common failure. Ask whether edges are bonded with PUR or EVA, PUR holds up far better to steam.

Thermofoil

In plain terms A PVC film thermoformed onto MDF, which allows continuous shapes with no joints and a perfectly uniform finish.

What they don't tell you Heat delaminates the film. A door immediately beside an oven with no side heat shield eventually blisters, and that is not covered by warranty.

Polymer / lacquered MDF

In plain terms A finish applied and cured over MDF. It is the minimalist choice: it gives a deep, even matte that melamine cannot match.

What they don't tell you Dark matte finishes show fingerprints and micro-scratches dramatically. Ask for a handled sample and look at it in raking light before committing.

Wood veneer

In plain terms A thin sheet of real wood over a stable substrate. You get genuine grain without the movement of a solid wood door.

What they don't tell you Wood shifts colour with light. A south-facing door will no longer match the pantry door after a few years, normal, but worth knowing in advance.

Painted MDF

In plain terms The substrate behind shaker doors. Its real advantage is repairability: a chip fills and touches up, and the whole kitchen can be repainted in ten years.

What they don't tell you Frame joints can telegraph a hairline with seasonal humidity swings, pronounced in Quebec between winter heating and humid summers.

Frequently asked

Quartz or granite: which should I choose?

Quartz if you want no upkeep: it is non-porous and never needs sealing. Granite if you cook a lot and set hot pans down directly, because it takes heat where quartz resin can scorch. The trade-off is real in both directions.

Is a wood countertop realistic in a family kitchen?

Yes, provided you oil it periodically and accept that it patinas. It is the only material here that fully repairs by sanding. Many kitchens keep it for the island and put stone around the sink, where moisture is constant.

Why do thermofoil doors blister near the oven?

Thermofoil is a PVC film thermoformed onto MDF. Sustained heat delaminates the film. A door next to an oven needs a heat-resistant side panel, otherwise the delamination is generally not covered by warranty.

Material is not enough

A good material badly arranged makes an unpleasant kitchen. Circulation width, sink position, and clearance around an island matter as much as the countertop choice.
