Take galley if…
Choose the galley if the room is between 2.30 m and 3.00 m wide. Two facing walls put everything one step away and give maximum storage in a narrow room, which describes most Montreal triplex kitchens.
Take l-shape if…
Choose the L if the room is over 3.00 m. Beyond that a galley becomes too wide to be efficient: you walk between the two runs instead of pivoting. The L recovers that width for a table or a walkway.

L-shape
Two perpendicular walls with the rest of the room free. The most forgiving: it works at almost any dimension.
